Matta rice (also called Rosematta or Kerala red rice) is a parboiled red variety native to Kerala rather than Tamil Nadu - we're upfront about that, since the rest of our catalogue is grown by named Tamil growers we work with directly. We stock it because customers who've cooked with it ask for it specifically.

The grain is medium-length and red, with the bran on, and a firmer texture than most raw rice. It has a pronounced flavour that suits strongly spiced food rather than plain eating - served with a good kuzhambu it holds its own rather than disappearing.

Cooking

Soak 4 hours. Cook 1:3, 35–40 minutes, or 5 whistles.
