Kichili Samba is a small-grained samba variety with a light natural fragrance, sitting somewhere between Thooyamalli and Seeraga Samba in both size and aroma. It's long been the household choice for festival cooking in parts of the Tamil interior.

The grain stays separate and firm when cooked, which is why it holds up in biryani, ven pongal and variety rices where the grains need to stay distinct. It has more character than Ponni without the assertiveness of an unpolished grain.

Naturally aged before sale - samba rice improves with time in storage, cooking drier and separating better than fresh-milled grain.

Cooking

Soak 30–45 minutes. Cook 1:2, about 20 minutes, or 3 whistles. Slightly less water than you'd use for Ponni.
