Kullakar takes its name from the plant's own low height, not the size of the grain. It's a rain-fed traditional variety, grown without irrigation on land where taller paddy struggles, and has stayed in cultivation in small pockets of the Tamil interior for that reason.

The grain is short and red-husked, with the bran left on, and cooks with the firmer bite typical of the heritage reds. Availability tracks the harvest rather than running year-round.

Cooking

Soak 3–4 hours. Cook 1:3, about 35–40 minutes, or 4–5 whistles.
