Idli arisi is a short, plump parboiled grain selected and milled for batter rather than for eating as rice. It grinds to a smoother consistency than ordinary parboiled rice and ferments more predictably, which is why it produces softer idlis with a more even crumb.
If your idlis come out dense or your batter doesn't rise reliably, the rice is usually the reason before the urad dal is.
We supply it to tiffin shops and messes across the district as well as to households.
Cooking
Not for cooking as rice. Soak 4–5 hours, grind with urad dal at roughly 3:1 or 4:1, ferment 8–12 hours.
